Caribbean Chicken Salad
4 oz Mixed Greens
2 T Caribbean Salsa - see below
3 oz Chicken breast, grilled to internal temperature of 160 F
1/2 oz Toasted Coconut Flakes
Toss greens with Caribbean Salsa. Place salad in a chilled pasta bowl and top with warm sliced chicken. Sprinkle with toasted coconut flakes.
Recipe makes 1 salad.
2 oz Lyons Frozen Pineapple Topping
4 oz Black beans
½ tsp Red Bell Pepper, diced 1/4 inch
½ tsp Red Onion, diced 1/4 inch
Mix all the ingredients together and let rest in a refrigerator for at least two hours.
Recipe makes 8 oz of salsa.
