Maple Granola


4 oz Lyons Select 5% Maple Syrup
2 Tbsp Dark Brown Sugar, packed
1 oz Vegetable Oil
2 tsp Vanilla Extract
1/2 tsp Kosher Salt
24 oz Rolled Oats
8 oz Slivered Almonds (or pecans, cashews, walnuts, etc.)
1 oz Wheat Germ
8 oz Flaked Coconut
1 oz Sunflower Seeds
2 oz Pumpkin Seeds
8 oz Craisins (or raisins, dried cherries, etc.)

Preheat your oven to 250°. Lightly grease a baking sheet. In a pot, mix together Lyons Maple Syrup, dark brown sugar, vegetable oil, vanilla and salt. Heat just until sugar is dissolved. In a large bowl, toss together the oats , nuts, wheat germ, coconut and seeds. Spread the mixture onto the baking sheet, leaving some small clumps. Bake for one hour in the over, stirring every 10 minutes, until the mixture is evenly toasted. Mix in the dried fruit. Cool, store at room temperature for up to a week in an airtight container, or freeze for a month.
