Pineapple Salsa


8 oz Craisins - finely chopped
20 oz Lyons Pineapple Topping, drained reserving 2 oz juice
2 oz Finely Chopped Red Pepper
2 T Finely Chopped Red Onion
1 T Jalepeño Pepper, seeded and minced
2 t Lime, zested
1/4 t salt

Combine all ingredients in a large bowl and mix well. Cover and refrigerate for 2 hours to allow flavors to blend. Serve with fish, poultry or beef.

Recipe makes 3 cups.
