Quesadilla w/ Peach Jalapeño Sauce


Peach Jalapeño Sauce
1 Pint Lyons Frozen Peach Topping
1 t Jalapeño pepper, seeded and deveined
2 T Onion
1 T Cilantro
1/4 t Garlic
1 t Lime juice
1/4 t Salt
6 Large our tortillas
8 oz Shredded cheddar cheese
4 oz Shredded Monterey Jack cheese
1/2 lb Cooked chicken, shredded
2 oz Green onions, sliced
2 oz Cilantro

Sprinkle 1/3 of the chicken, onions, cilantro, and cheese on a tortilla. Lay another tortilla on the top and place on a hot griddle for approximately 10 minutes or until cheese is melted, turning over once. Repeat to make two more quesadillas. Serve with Peach Jalapeño Sauce.

Makes 3 quesadillas.


Directions for Peach Jalapeño Sauce
Place all ingredients together in a blender
and process until smooth.

Makes 16 oz of sauce.
