White Peach Fritters


12 oz All Purpose Flour
4 oz Pinot Grigio or Reisling Wine
4 oz Lyons White Peach Puree
2 ea Egg Whites
2 ea Egg Yolks
.5 oz Vegetable Oil
20 oz Vegetable Oil, for frying
1/8 tsp Salt
1 oz Sugar
Powdered Sugar, for garnish

Whisk the wine, Lyons White Peach Puree, yolks, vegetable oil and salt together. Gradually whisk in the flour to make a batter. When smooth set aside. In a pan heat 2 inches of vegetable oil to 350 degrees. In a mixer with a whip attachment, whip egg white until soft peaks form. With the mixer running add sugar gradually and whip until stiff peaks form. Fold egg whites into the batter until completely mixed. Using a scoop or a spoon, scoop out an amount of batter and cook in oil until golden, flipping once. Drain on paper towel and sprinkle with powdered sugar before serving.
